I'll be the first to admit that I very much dislike yogurt...yeah, it's true. So, when I went on this "little diet" thingy and one of the breakfast recipes was for a yogurt parfait you can imagine how me no likey! But, I was dedicated to it and I was going to gag it down if it was the last thing I did. I ended up loving, yes loving, this recipe. I even crave it sometimes...crazy!
Yogurt Parfait
(Denise Austin's Daily Dozen Diet)
1 c. nonfat vanilla yogurt
1/2 c. sliced strawberries
1/2 c. sliced mango (fresh or frozen)
2 Tbsp. sliced almonds
Lime juice, to taste
zest of lime
In a glass bowl or tall glass, alternate layers of yogurt with layers of fruit. Top with almonds, a squeeze or two of lime, and garnish with lime zest.
I actually combine the yogurt, lime juice and zest. Then I alternate strawberries and the yogurt and top with the almonds. No mango for me...I'm a little allergic. Hope you all enjoy this light, summer-y treat!
