In Memory of "Bomps"

Today is June 14th, which is Flag Day. It is also my grandpa (aka Bomps) birthday. He was one of the greatest men I have ever known. So today, I dedicate this recipe to him.

Lasagna
1 jar spaghetti sauce (store bought or homemade), 16 oz. of mild Italian sausage, 12 lasagna noodles, 2 containers ricotta cheese, 2 eggs, 1/4 c. parmesan cheese, 1 tsp. basil, 1 tsp. oregano, 1 tsp. parsley flakes, 2 c. mozzarella cheese, shredded


In a large skillet, brown sausage. Add spaghetti sauce to warm.


In a medium bowl, mix together ricotta cheese, eggs, seasoning, parm. cheese and 1 c. of mozzarella cheese.


In a 9x13 pan, spray with non-stick spray. Coat the bottom of the pan with spaghetti sauce. Start layering noodles, cheese mixture, noodles, sauce, and repeat until all the noodles have been used up. Bake at 350 degrees for 30-35 mimutes (unless you use the oven ready noodles, then you will want to cook for 45 minutes). Serve with a side salad and garlic bread!

This is one of my "Bomps" favorite meals. I miss him all of the time. This has been a great meal to remember him today!!
