Need a Little Energy on Your Monday??


No-Bake Energy Balls
1 c. oatmeal
½ c. peanut butter (or other nut butter)
1/3 c. honey
1 c. coconut, or dry cereal, or whatever else you’d like
½ c. ground flax seed
½ c. chocolate chips (any kind)
1-2 tsp. vanilla

Combine everything together. Refrigerate for 1 hour; then shape into balls. Store in an air tight container for about 1 week (IF they last that long) in the fridge.

* I didn't have coconut at my house today, but I had Chocolate Cheerios and added those instead. They still tasted soooo good!
These are so yummy, I don't think that the kiddos will even know they are good for them!
